This is the easiest pancake recipe (from one of my favorite blogs Ambitious Kitchen) you will ever make! Dump all the ingredients in a blender and let the blender do the work.  Prep and cook time total 20 minutes.  The pancakes turn out fluffy and are naturally gluten free, dairy free and contain no flour or added sugar!
