As I write this, Shrove Tuesday is tomorrow. Some of you may know this day as Mardi Gras. This is the day to eat pancakes. Why? A long time ago, it was tradition to clear the house of rich foods like eggs, milk, and sugar before the fasting season of Lent. Pancakes were and still are a great way to do this. Lee and I will be enjoying pancakes, but they won’t be just your typical out of the box pancakes. I will use a recipe that involves protein powder, bananas, and almond milk (just a few of the ingredients). In fact, I have a healthy pancake recipe already on my website and will add this new recipe if it is any good. The pancakes we will eat will be full of protein which will keep us full and not spike our blood sugar like typical pancakes would. The toppings can make a healthy pancake go south quickly. Syrups are loaded with sugar. Lee loves it! He will smother his pancakes in organic Maple Syrup. This will probably be the only topping he uses. For me, I am different. Even as a kid I was not a fan of syrup. I love Greek yogurt on my pancakes with a little bit of local honey and nuts and berries.
Here are more delicious toppings for a healthy pancake:
- Nut butters (almond, peanut, cashew etc. Pick a nut butter with minimal ingredients)
- Applesauce (choose an applesauce with minimal ingredients)
- Nuts/Seeds
- Seasonal Fruit (I will use frozen berries)
- Greek Yogurt (minimal ingredients)
- Cacao Nibs
- Coconut Flakes
- Eggs
- Tomato
- Avocado
- Fresh Herbs
- Goat Cheese
- Cottage Cheese
- Ricotta
- Hummus
