I have made this meal for the last three weeks now and it gets easier and easier everytime. Not only is it easy to put together, it is bursting with bright, healthy flavors. My favorite part is the taste as I love curry seasoning and this recipe calls for curry, thyme and basil- a yummy combo of flavors.
We enjoyed it just as itself and over quinoa. I also subbed chickpeas for the artichokes.
